This recipe is one of our favorite. Simple yet so scrumptious! If you’re on a lazy day like me, baking is one of the fast and easy meals to have both for lunch or dinner and for me; I usually cook on for dinner coz my hubby doesn’t come home for lunch. It’s easy for me coz I never have to worried about lunch and I can relax during the day time.
I decided to try this recipe one day is because I had a lot of left over tomatoes that I bought for my spaghetti sauce. Then I wanted to make tomatoes omelet’s that I always did for my hubby since that is his favorites too BUT I want something new for us. After searching through my favorite books, I found this which I have all the ingredients on my pantry.
Did it and we both love it SOOOOOOO MUCH! What you waiting there… go ahead and give it a try.
Ingredients:
2 tablespoons breadcrumbs
1 tablespoon grated Parmesan cheese
1 teaspoon Italian Seasoning
1/2 teaspoon Seasoned Salt
4 ripe red and/or yellow tomatoes, cored and cut in half, crosswise
4 teaspoons olive oil
Method:
1) Mix breadcrumbs, cheese, Italian Seasoning and seasoned salt in small bowl.
2) Sprinkle cut side each tomato and half with breadcrumbs mixture (you will use about 1 1/2 teaspoons on each). Drizzle each with 1/2 teaspoon olive oil and place cut side up on foil-lined broiler pan.
3) Broil under preheated broiler 4 minutes or until tomatoes are hot and topping is brown and bubbly.
