Oven-Fried Chicken

It so easy I have to tell you. Sometimes you just want to be lazy or tired of cooking and yet still wishing to have a scrumptious meal to satisfying your hunger. This is the meal I will make for my dinner. It took me about five minutes to prepare it and dump it into the oven and let it cook by itself without messing the kitchen. Calvin loved it a lot when I made this for dinner. It tastes exactly like a fried chicken but in a health way coz we don’t need the frying oil for it. Oil free! You can eat with salad or pasta as you like.
Ingredient:
¼ cup flour
1 ½ teaspoons Season-All Seasoned Salt
½ teaspoon Oregano Leaves
¼ teaspoon Ground Black Pepper
1 ¼ pounds boneless chicken breast halves or thighs
¼ cup milk
1 tablespoon butter, melted
Method:
Spray 15 x 10 x 1-inch baking pan with nonstick cooking spray.
Mix flour, Season All Seasoned Salt, Oregano leaves and Ground black pepper on large plate. Moisten chicken with milk. Coat evenly with flour mixture. Place chicken in single layer in prepared baking pan. Drizzle with melted butter.
Bake in preheated 425F oven 15 to 20 minutes or until chicken is cooked thorough.

Clams with Ginger

One of my favorite dishes, ginger just one of my favorite ingredients in cooking. It brings the refreshing taste of it. Actually I wanted to cook this clams with the rice wine but changed my mind coz I wanted something different. Something I never try it before. Yes! I been cooking the same old dish and I’m changeling myself to find something new. Not much different that the rice wine dish but came across a Thai version of it without the wine. So come and try it!
Ingredients:
2lb clams in their shells
2 tablespoons sunflower oil
4-5 garlic cloves, finely chopped
¼ cup Vegetable or seafood Stock or water
2 oz fresh ginger root, peeled and finely sliced
1 tablespoon oyster sauce
1 tablespoon onions, finely slice
Cilantro leaves, to garnish
Method:
Prepare the clams. Heat the oil in a nonstick wok or skillet and stir-fry the garlic over medium heat until lightly browned.
Add the clams to the wok and stir-fry over medium heat for 4-5 minutes. Add the stock or water, ginger, oyster sauce, soy sauce, and green onions and stir-fry for another 2-3 minutes or until all the clams have opened. Discard any shells that have not opened. Spoon onto a serving plate, garnish with a few cilantro leaves, and serve immediately.

Broiled Tomatoes Recipe

This recipe is one of our favorite. Simple yet so scrumptious! If you’re on a lazy day like me, baking is one of the fast and easy meals to have both for lunch or dinner and for me; I usually cook on for dinner coz my hubby doesn’t come home for lunch. It’s easy for me coz I never have to worried about lunch and I can relax during the day time.
I decided to try this recipe one day is because I had a lot of left over tomatoes that I bought for my spaghetti sauce. Then I wanted to make tomatoes omelet’s that I always did for my hubby since that is his favorites too BUT I want something new for us. After searching through my favorite books, I found this which I have all the ingredients on my pantry.
Did it and we both love it SOOOOOOO MUCH! What you waiting there… go ahead and give it a try.
Ingredients:
2 tablespoons breadcrumbs
1 tablespoon grated Parmesan cheese
1 teaspoon Italian Seasoning
1/2 teaspoon Seasoned Salt
4 ripe red and/or yellow tomatoes, cored and cut in half, crosswise
4 teaspoons olive oil
Method:
1) Mix breadcrumbs, cheese, Italian Seasoning and seasoned salt in small bowl.
2) Sprinkle cut side each tomato and half with breadcrumbs mixture (you will use about 1 1/2 teaspoons on each). Drizzle each with 1/2 teaspoon olive oil and place cut side up on foil-lined broiler pan.
3) Broil under preheated broiler 4 minutes or until tomatoes are hot and topping is brown and bubbly.
